This book chronicles my strange, roller coaster path to surviving middle age and the steps I took so I could be around to watch my little girl grow up. Hopefully, It can be a wake up call for the majority of regular guys in this country like me who need a swift kick in the butt to wake up before it is too late. The truth is sometimes stranger than fiction and this book is an example. If I can help just one person make a change, then it worth although the research, time and effort.

Biography

Aftan has served for the last 10 years as Director of Research & Development, Purchasing and Risk Assessment for Steak-Out Franchising, Inc., a home meal replacement concept specializing in delivery of cooked-to-order steak, chicken, and seafood entrees, burgers and sandwiches, and specialty salads for 70 franchise units in the Southeastern United States.

In 2006, He was diagnosed with Type 2 Diabetes, and metabolic syndrome. In 2008, he successfully survived quadruple bypass heart surgery.

He is a member of the Research Chefs of America and The Institute of Food Technologists. Aftan has been published in over 40 articles, including three feature stories, five cover stories in Nation's Restaurant News, and a feature article in the New York Times on Food Safety Communication. He has also presented at several of the industry's premier conferences. Aftan was a panel member on the 2003 NRN Food Safety Roundtable; He was a speaker on Dealing with Risk in a Brave New World at MUFSO 2003 in Atlanta, Georgia. He spoke at the Foodservice Symposium 2005 on Managing the Threat of Food-borne Illness and in 2007; he spoke on Emerging Food Safety technologies. He has presented at the Food Safety Summit in Washington, D.C. In 2007, he received an award from Foodservice and Packaging Institute for Innovation in Food Safety Packaging.

Aftan has been a foodservice professional for 26 years. His career started with Grisanti, Inc. in Louisville, Kentucky where he served as General Manager of Sixth Avenue - an American Regional Cuisine restaurant that hosted the First Symposium on American Cuisine in 1982. Aftan also served as General Manager of Casa Grisanti, the only Mobil Four Star restaurant in Kentucky during the 1980's, and helped develop the Grisanti Casual Italian Restaurant chain.

After spending over a decade working for Michael Grisanti, former President of the National Restaurant Association, Aftan was approached by John Y. Brown, the former Governor of Kentucky and President of Kentucky Fried Chicken, to help develop a rotisserie chicken concept called "Kenny Rogers Roasters" As Director of Research & Development, Aftan spearheaded menu development as the chain grew to over 350 units domestically and 50 units internationally before joining Steak-Out.

Living Wills - Discuss with your Priest and Loved Ones PDF Print E-mail

As a lay person of Orthodoxy, I cannot instruct a person on what to do other than discuss with your priest and loved ones about what you want to happen if you are unable to communicate.  As much as we would like to think that we will live uneventful ends of life, we cannot predict how the end will be like. 

 Who is to say if the doctor or nurse treating you, if you are in a coma, has the same values as you do?  A living will gives some direction as to how you want to be treated if you are unable to express your needs.  You might want to be kept alive or if you are suffering a terminal condition perhaps you wish to mercifully pass onto the Lord.  By talking to your loved ones and your priest, you can insure that your wishes are known and to seek guidance.

In one of my favorite Sherlock Holmes stories, the esteemed detective had deduced that the villain was an American. But, all the suspects were purporting to be British. How to figure out which one was lying?

Elementary, my Dear Watson! Holmes tossed the prime suspect a ball. He caught it with his left hand, at which point Holmes promptly arrested him.

Why, you might ask? Because the man was right-handed. A right-handed European man would catch a ball thrown to him with his right hand. A right-handed American, however, would wear his baseball glove on his left hand. That means a right-handed American would catch a ball with his left hand, which is the exact opposite of how the rest of the world works.

 My first Christmas Eve in Poland, I was invited to a friend's house to celebrate. It was 1992, and though I had been teaching in Poland for six months, most of my time had been spent around other ex-pat Americans. This was my first real Polish holiday, and I had looked forward to it eagerly.

Whenever I tell someone that I teach the harp, they always assume that my students are children. Nothing could be farther from the truth. Over the years, my adult beginner students have outnumbered the children. I like adult beginners........and they like me.

Success is built into my classes. I nurture a "can do" attitude. We take baby steps and have fun along the way
